A teacher at the University of Basrah chairs a discussion committee at the College of Agricultural Engineering, University of Baghdad

The lecturer in the Department of Animal Production in the College of Agriculture at the University of Basra, Prof. Amira Kazem Nasser, chaired the discussion committee for doctoral student Zaid Imad Hamid, College of Agricultural Engineering Sciences, University of Baghdad, which was entitled (The effect of replacing nitrite with powdered beetroot and camel thistle and their aqueous extracts on the qualitative, sensory and microbial characteristics of meat sausages chilled bovine). The thesis included the use of beetroot powder and camel thistle as a substitute for nitrates in the manufacture of beef sausages, as the addition of plant extracts led to prolonging the storage life of processed sausages by reducing oxidation and decomposition indicators and reducing indicators of microbial contamination with a rise in general acceptance and some qualitative characteristics of the manufactured product instead of using Nitrates have negative effects on human health.
