
Graduate/PhD student Alaa Riyad Abdul Sattar, a student and lecturer in the Department of Food Sciences at the College of Agriculture at the University of Basra, won first place in the "Three-Minute Thesis" competition. His thesis, titled "The Effect of Applying Locally Designed Continuous Ultrasound on the Properties of Some Types of Juices," was supervised by Professor Dr. Asaad Rahman Saeed and Professor Dr. Ammar Badran Ramadan.
The study aimed to design and develop a system for pasteurizing juices using ultrasound.
The study found that the system well preserved all physicochemical properties and demonstrated a high inhibitory capacity against microbial and enzymatic activity. Therefore, this emerging technology could be a promising alternative that contributes further to the sustainable manufacturing of liquid foods.
