A master's thesis at the University of Basra investigates the purification and characterization of cyclodextrin glucanotransferase produced from a local isolate of Mesobacillus jeotgali HA bacteria and its use in food systems.

The College of Agriculture at the University of Basra reviewed a master's thesis on "Purification and Characterization of Cyclodextrin Glucanotransferase Produced from a Local Isolate of Mesobacillus jeotgali HA and its Use in Food Systems."

The thesis, presented by researcher Huda Ali Abdul Hussein, aimed to isolate and characterize a local bacterium that efficiently produces the enzyme and utilize it to improve the quality of food products.

The study included isolating and screening bacterial isolates, identifying the most efficient ones, investigating the optimal conditions for enzyme production, extraction, purification, and characterization, and then using it in laboratory bread making and evaluating its sensory properties.

The study demonstrated a clear improvement in specific volume, crust color, shape uniformity, and texture, thus enhancing its potential for food applications.
