A researcher from the College of Agriculture at the University of Basra reveals in an interview with Al-Nabaa Information Network the production of gamma polyglutamic polymer and its food applications.

Al-Nabaa Information Network published an interview with researcher Mohammed Jabbar Hafez, discussing the details of his doctoral dissertation in agricultural sciences at the College of Agriculture, University of Basra, entitled "Production of Polyglutamic Acid (PGA) Polymer from Plant Waste and its Uses in the Baking and Dairy Industries."

The interview covered the details of the dissertation, which aimed to isolate and characterize a safe, locally sourced, and internationally registered bacterial strain, and to utilize grape waste and soybean meal as sustainable media for producing high-purity and high-yield PGA polymer.

The researcher presented the most prominent results of his study, explaining the polymer's superior ability to improve the rheological properties of dough and strengthen its gluten network, thus enhancing bread quality and delaying settling. He also noted its role in enhancing the stability of yogurt and preventing its liquids from leaking, making it a natural additive with high industrial and nutritional value. The publication of this dialogue reflects the high level of scientific output of graduate students at the University of Basra and underscores the importance of supporting applied research that utilizes modern technologies to address agricultural challenges.
